I aim to help Charcuterie grow into a vibrant and well-practiced part of the modern American menu and preserve the family farms that provide the best ingredients for Chefs.
After 45+ years in the kitchen, Chef Brian has a deep well of knowledge. He has received national and international acclaim for taking the complex and beautiful craft of charcuterie and adapting it to the modern American kitchen. He is known as a Chef's 'chef', building 7 successful restaurants, training multiple generations of talented chefs as a culinary instructor for 27 years, and never missing an opportunity to help his local community and grow the industry he loves.
